We ran the tortilla oven as slowly as possible in order to have warm tortillas available for our customers to buy throughout the day.

When we first opened our tortilleria, we were advised to get a crew in early to pump out a full day of tortilla products and send the crew home by 1pm.   Following that advice would go against our motto… “authentically fresh con amabilidad”, so we did the exact opposite — we ran the tortilla oven as slowly as possible in order to have warm tortillas available for our customers throughout the day.

Over the years, we’ve had to steadily increase the speed of the tortilla oven with demand, but it’s the same approach of taking our time and making 100% Corn tortillas fresh and bagging them warm throughout the day!

HOMEMADE MAIZE PRODUCTS

Our tamales are made with very minimal preservatives and are meant to be enjoyed within a few days for the best tamale-eating experience. We also make corn tortillas, tortilla chips, masa for tortillas, masa preparada (ready to use for homemade tamales), tostadas, taco shells, buenuelos, nixtamal, and pork skin cracklins from scratch.
